WHere is a simplified interpretation of a beverage featured on a new drinks list. It's a large-volume pre-mixed which is loaded full of tastes of a Christmas time, rendering it excellent for a holiday party. Any leftover syrup to use in brunch beverages, sweets, or to mix additional servings of this cocktail.
The Bikini Cocktail
Makes enough for 10 servings
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Drink (makes 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
Making the Citrus Syrup: Put all the components into a pot, bring to a simmer, stirring to dissolve. After that, take off the heat and leave to cool completely. Decant to a clean bottle, seal and refrigerate it in the fridge, it can be stored for around four weeks.
To make Premix: Mix the specified spirits and syrup into one big jug, allow it to infuse for an hour, then pass it through preferably using a fine cloth, making it perfectly clear.
When ready to serve: Measure 85ml from the cocktail base into your mixing glass filled with ice, gently stirring lightly for about 60 seconds to cool it down. Pour into an chilled martini glass or a similar vessel, garnish with a few cranberries and complete it using a quick spritz of the essential oil over the drink.
